Healthy Dairy Free Gingerbread Latte

Latte should be synonymous with delicious, not unhealthy…this recipe will prove that!

Oh, the weather outside is frightful. But the fire is so delightful. And since we’ve no place to go…Let it snow, let it snow, let it snow!

You probably don’t need reminding, but ’tis the season for holiday-flavored lattes. I’ll be the first to admit that the announcement of Pumpkin Spice Latte season in late October leaves me craving those delicious (but unhealthy) beverages on the daily. But my tummy usually ends up…NOT so happy.

As you can see it’s chilly up here in the Idaho Panhandle! Snow is on the ground and the fire is blazing. As I snuggled up on the couch this morning, scrolling through my morning blog fix research, something delicious caught my eye…Wellness Mama’s gingerbread latte!

Skeptical it would satisfy my craving for the “real thing”, I gave it a whirl.

A few alterations of my own here and there and I was on to something. I even swapped the butter for more coconut oil (as I’m always looking for ways to get more into my diet). This was the perfect mid-morning treat. It’s dairy free (if that’s important to you)and refined sugar free to boot (with a sugar free option that is equally as delicious)!

I’m not going to fib and tell you it was better than the “real thing”, but it’s hard to match those artificial flavorings and preservatives!

This recipe absolutely will keep me from dropping $5 dollars on a drink, and I’ll rest easy knowing I filled my belly with something sweet, delicious and good for me.

Gingerbread Latte

Warm up with this cozy drink on a chilly fall or winter day. This healthy latte will hit the spot and has coffee or non-coffee options.

Ingredients

Instructions

  • Bring water to boil in a teapot or saucepan on the stove, or brew coffee if using.
  • Add all ingredients, except nutmeg, to your blender (or use an immersion blender).
  • Blend well until coconut oil emulsifies and creates a nice foam (yum!). You’ll notice your “latte” going from a dark coffee color to a light tan. This is the magic of coconut oil and a blender!
  • Pour into your favorite mug (make it a large one, you did use 10 oz. of water/coffee) add a dash of nutmeg and enjoy every last, healthy drop!

Notes

  • For you coffee lovers, you can sub the water and Dandy Blend for 10 oz. hot coffee, the results will be equally delicious!
  • The original recipe calls for butter and coconut oil, but I chose to forego the butter and add extra coconut oil. Remembering how great healthy fats are, this is the perfect way to get more daily! But both are equally delicious and nutritious.
  • I also add Collagen Peptides, which comes from grass-fed protein and is full of amino acids (beneficial for hair, skin, nail, bone, cartilage and joint health). It’s also among the healthiest forms of powdered protein making it a great alternative to protein powders (which can be highly processed and damaged during the heating and processing).
  • Sub liquid stevia (vanilla creme is outta this world) instead of maple syrup for a sugar free option.
  • I’ve noticed when my water is boiling hot, the coconut oil doesn’t emulsify the same way, leaving a less appetizing beverage. Try letting your water cool slightly before blending it to avoid this problem.
  • Do use caution when using a blender with an airtight seal as hot beverages can cause the lid to blow off (never good!).

    Bwahahah! I’m dying!!! I had no idea you were supposed to EMULSIFY the coconut oil! I can’t count how many times I’ve heard/read people raving about coconut oil in their coffee, and when I tried it myself, I had this nasty greasy inedible mess floating in my coffee forever ruining my future attempts…until now! Bought my mom Dandy Blend to try as an alternative to her dandelion tea. It’s a hit! BTW, I notice you guys use Vital Proteins beef collagen. Coincidentally, I ordered this same brand because my normal Great Lakes brand wasn’t available through Thrive Market. Is there a reason you prefer Vital Proteins over Great Lakes?

      You’re not alone Kourtney! I’ve read many blogs that mention “stirring” coconut oil into their tea or hot beverage. I’ve even tried the “stir and drink” method! But, blending and emulsifying is the only way I’ve found that’s palatable. This can even be a great dairy creamer alternative as it lends itself to a “creamer like” substance. Great news on the Dandy Blend! We have used both brands of collagen/gelatin protein and have had great success with both. Vital Proteins offers some great deals from time to time (which we’ll keep you updated on) and can end up being a better deal if you stock up during a sale.
