Raspberry-Summertime-Dessert_Full-of-Days_1600-x-900

ost nights, I crave something sweet to cap off the evening. Therefore…most nights we have dessert. Because many desserts are full of sugar, or take lots of time to bake, they’re not the best to eat just before calling it a night. We’re constantly experimenting with other yummy combinations that utilize healthier, naturally sweet ingredients, that you can throw together in a flash.

I served this recipe up in a mug (or 1/2 cup ramekin for the kiddos) and everyone was ooh-ing and ahh-ing like I’d whipped up a five-star dessert. It really was delicious!

Summertime means fresh raspberries are ripe for the pickin’. They’re also at their lowest price in grocery stores and may even be found at your local farmer’s market! Bring them home, flash freeze them on a cookie sheet and toss them into a zip-top bag. When your sweet-tooth comes a knockin’, you’ll have something healthy and satisfying to answer with.

Raspberries (frozen)
Mini Chocolate Chips
Vanilla Stevia

To Make: This recipe makes 4 servings (or 8 half-size servings, perfect for kids).

Step 1: Place 1 cup frozen berries and 1 Tbs mini chocolate chips into 4 coffee mugs.

Step 2: Mix cream, milk and stevia together to desired sweetness.

Step 3: Pour 1 cup sweetened milk over berries.

Step 4: Serve immediately for a slushy, ice-cream-like treat, or let sit at room temperature for 15-20 minutes to allow berries to soften slightly.

This recipe works well with most berries. We just happen to like raspberries the best!

We used to have something similar as kids… Any frozen berry will do, my mom would treat us with huckleberries! Although, she would forgo the chocolate chips, just berries and cream.. YUMMY!

It’s equally delicious without the chocolate! Well…maybe not equally, but ALMOST! I like how hucks and blueberries turn the cream purple!
