et you never thought a bug could taste so good!

If you’ve read this post on butter you know why it’s important to consume an adequate amount of healthy fat each day. Sometimes this is hard to do, especially if you’re trying to add in butter and coconut oil for their different health benefits.

One way we enjoy the advantages of these healthy fats is by making chocolate bugs. They make a great mid-day snack to pair with a cup of Dandy Blend, or they’re a perfect way to conclude your evening meal.

When my kids eat them they think they’re getting a candy bar and I’m grinning knowing this “treat” is doing so much good for their body!

This recipe can be adapted countless ways. Not a fan of coconut? Add in some crispy nutsmini chocolate chips or dried cranberries and a little fresh orange zest.

Omit the add-ins and opt for a flavored chocolate by adding in some peppermint, orange or vanilla extract (peppermint or sweet orange essential oils would also work in this recipe, just be sure to add them after the chocolate has cooled), you could even add in spices such as cinnamon or cayenne for a little kick.

Ingredients

1/2 cup Coconut Oil
1/2 cup Butter
1/2 cup Cocoa Powder
2 Tbs. Maple Syrup

8 Tbs. add-ins (I used toasted coconut chips from Costco)

To Make: This recipe makes about 8 “bugs”.

Step 1: Melt butter and coconut oil in a saucepan on the stove over medium-low heat.

Step 2: Once melted, add cocoa powder and maple syrup. Stir to combine. (For a sugar-free option, sweeten, to taste, with vanilla stevia.)

Step 3: Taste and adjust. (The recipe, as is, hints at a dark chocolate taste. So add more cocoa or syrup to your liking.)

Step 4: Pour one tablespoon of chocolate mixture into each silicone mold (can also use a silicone muffin tray). Add in 1 tablespoon of add-ins and top with one more tablespoon of chocolate.

Step 5: CAREFULLY transfer plastic molds to freezer and allow to chill until hardened (it helps to use a small tray for transferring).

Step 6: Remove your “bugs” from the mold and store in an airtight container in the refrigerator.

    Yes indeed I got the bug mold and that’s what made the results so cool! Made them with PB tonight so we will see how those turn out!

      Did you swap the butter for peanut butter? Or just add it in addition? How much did you use? I want to make the peanut butter bugs now!

    So I made these last week and seriously wish I could have captured the looks on ALL of our faces once I popped these out to see the finished product:) They turned out so good! And knowing that I had some ready to eat at home they saved me from eating a junky treat a couple of times this week while we were out! Woot! Woot!

      That’s great Tracey! Did you get the silicone bug molds? Our kids love them and have fun deciding which bug to eat! The molds work great for homemade jello made with Vital Proteins gelatin too!

      Lauren, that sounds SO GOOD! Were you following the recipe above? How much peanut butter did you add? I will definitely be trying that soon. I’m thinking the natural sweetness of the peanut butter might allow you to cut the sugar as well. Double bonus!

    Hmmmm…I need to try that Dandy Blend but I’m not so sure about it! Can you help describe the flavor or give me a recipe to use?

    I can’t wait to make these bugs in a Christmas shape to serve! I’m going to make them with doTERRA Peppermint essential oil so I don’t feel like I’m missing out on my favorite Christmas candy! Thanks Kelsey! 🙂 ♡

      Heather, when I make my drink I use 2 heaping teaspoons Dandy Blend, a splash of raw cream and about 5 drops of Stevia (Sweet Leaf Vanilla Creme, or Hazelnut) to 12-16oz hot water. To me, the taste resembles those International House instant coffee powders I used to drink as a kid! That’s the only thing I could compare it to, but it’s VERY much like drinking coffee and takes away my desire for another cup! Having tried other coffee alternatives, this is the one I like best!

      You’re going to LOVE the peppermint essential oils in the chocolate…I’ve made peppermint butter drops before using coconut oil, butter and peppermint essential oil. Super delicious (similar to those addicting wedding mints)! The kiddos gobbled them up!

      I’m so glad you like the Dandy Blend! The bugs are amazing, they get gobbled up so quickly in our house! I guess that’s what happens when 6 people are eating them. Mmmm!
