Gingerbread Latte

Warm up with this cozy drink on a chilly fall or winter day. This healthy latte will hit the spot and has coffee or non-coffee options.

Ingredients

Instructions

  • Bring water to boil in a teapot or saucepan on the stove, or brew coffee if using.
  • Add all ingredients, except nutmeg, to your blender (or use an immersion blender).
  • Blend well until coconut oil emulsifies and creates a nice foam (yum!). You’ll notice your “latte” going from a dark coffee color to a light tan. This is the magic of coconut oil and a blender!
  • Pour into your favorite mug (make it a large one, you did use 10 oz. of water/coffee) add a dash of nutmeg and enjoy every last, healthy drop!

Notes

  • For you coffee lovers, you can sub the water and Dandy Blend for 10 oz. hot coffee, the results will be equally delicious!
  • The original recipe calls for butter and coconut oil, but I chose to forego the butter and add extra coconut oil. Remembering how great healthy fats are, this is the perfect way to get more daily! But both are equally delicious and nutritious.
  • I also add Collagen Peptides, which comes from grass-fed protein and is full of amino acids (beneficial for hair, skin, nail, bone, cartilage and joint health). It’s also among the healthiest forms of powdered protein making it a great alternative to protein powders (which can be highly processed and damaged during the heating and processing).
  • Sub liquid stevia (vanilla creme is outta this world) instead of maple syrup for a sugar free option.
  • I’ve noticed when my water is boiling hot, the coconut oil doesn’t emulsify the same way, leaving a less appetizing beverage. Try letting your water cool slightly before blending it to avoid this problem.
  • Do use caution when using a blender with an airtight seal as hot beverages can cause the lid to blow off (never good!).
