True to Inland Northwest fashion, we’re getting some gloomy, drizzly Spring weather. We don’t mind the rain, it just means we’re cooped up inside all day, and with four kids these days can seem unending. So what’s a family to do when they’re cooped up all day? First, take a drive, sing songs together and watch for wildlife! Then, when you come back home, whip up some comfort food.
As our reputation for “eating healthy” has grown, one of the questions we get asked a lot (especially from guys) is, “Does your food taste good?”...and another one is, “Don’t you miss junk food?”
Yes and yes!
But missing junk food doesn’t mean we go without, it just means we get a little creative in the kitchen and make our junk food “healthier”. I’m not claiming it’s good for you, I’m just saying it’s healthier than the pre-packaged counterpart or getting it in a restaurant (and better tasting!).
Hearing the mention of a “Bloomin’ Onion” yesterday set off one of those cravings...it was almost as bad as cravings during pregnancy! I had to have a bloomin’ onion! Unfortunately (or probably fortunately) the closest Outback Steakhouse is 2 hours away, so I hit up Google and found a copycat recipe, which I quickly adapted to suit my health conscious ways...The Hubs quickly threw together a post with the recipe and we shared it with all our internet friends! Apparently ya’ll love fried food as much as we do because the response was huge!
In case you missed the original post, here it is! Our homemade onion rings...which we called onion fingers because...well...when you have kids, they call it like they see it!
