Hello again friends!
I trust your summer is treating you well? At least, we hope it is. Ours has been particularly “Full” as we’ve tried to make the most of our numbered sunny days, knowing all too well that Summer is high tailing it outta here faster than we’d like.
This past weekend I was faced with a challenge to pack a healthy, fuelling (and lightweight) camping menu for The Hubs, our two oldest kiddos, and myself for an overnight backpacking trip. We were carrying both our food and water (a filter pump is now at the top of our camping wishlist). Did you know it’s recommended to pack in a gallon of water per person, PER DAY? This equated to 32 pounds of water distributed between The Hubs and my pack, plus all our gear! So you can see my motivation to pack light on the food was well-founded.
I kept to what I knew, utilizing some of our faves like smokies (roasted over the fire), jerky, apples dipped in almond butter, cans of tuna (and a baggie full of garlic salt), pookie-mix and my all-time favorite camping dessert...no, not S’mores, but roasted apples (see recipe below).
I thought schlepping my 30 pound toddler around while hiking was hard-core, but a 45 pound pack is no joke, and my legs are STILL protesting the cumulative 11 mile weekend at elevations well over 4,000 feet. I came home and slept over 12 hours straight!
What are some of your go-to camping foods?
*Fire Roasted Apples: Core an apple (we like Granny Smith), and to the center add 1 Tbs Kerrygold butter and 1 tsp cinnamon and sugar to the top and bottom of the core. Double wrap it in tin-foil and place on the hot coals for 10-15 minutes until cooked through, but not too soft! Unwrap carefully and enjoy! It’s like apple-pie without the crust!
