School is in full-swing here in the Steffen house. With the first week under our belts, we’ve exhaled a little as we’re off to a pretty good start. As good as it can be with a two year-old running amuck! You read that right, I said a TWO year-old! We’ve had a pretty big couple of weeks…
Knowing school was quickly approaching we needed to get some food preservation out of the way. So a ginormous order was placed with Azure Standard; 60 pounds of peaches, 20 pounds of cucumbers and 15 pounds of green beans. At the same time our pear tree started dropping fruit like crazy. We’ve pitted, sliced and frozen our way through the peaches for smoothies (because peach smoothies are our fave), canned 20 quarts of pickles and 20 quarts/pints of dilly beans (I’ll be shocked if we have any left by Christmas), and are gearing up to dehydrate pears this week. And here come the prune plums! While freezing all those peaches the forgotten three gallon ziptop bags full of leftover pulp from making cherry syrup turned up. So we pureed it all and dehydrated a bunch of fruit leather (check out the recipe below).
These are FULL days...ones that may be appreciated more months from now.
We continue to love the craziness of each individual day, and are careful to not get overwhelmed. as is so easy this time of year.
