Last summer our daughter turned nine…NINE ya’ll. That’s like, right before 18!
For her birthday, all she wanted was a Nourishing Traditions Cookbook for Children. Bless her! She loves to help out in the kitchen, and she loves learning the details behind why we practice traditional eating! She’s fascinated by the scientific reasons why we grind and soak our flour, and why we try to limit sugar. These things are hard to grasp as a kid, but she eats this stuff up! No pun intended!
After receiving her cookbook (and reading it cover to cover that very same day), the first recipe she wanted to make was Butter Cookies.
As if this weren’t cute enough (kids cooking = ADORABLE! You have seen the Master Chef Junior show, right?) she also wrote a paper for school about how to make butter cookies! #futureblogger
So as not to hog her cuteness to ourselves, without further ado, our adorable NINE year old and her favorite Butter Cookie recipe.
These are so good, I can’t believe they’re actually healthy! – Malia They’re still a cookie, love, not a carrot!
The following recipe is a quadruple batch…the original only makes 12 cookies and that’s just too much work for 12 itty bitty cookies! PS-they freeze beautifully!
Ingredients/Supplies
1 cup (2 sticks) butter
3 cups spelt or whole wheat pastry flour
6 Tbs kefir, whey, buttermilk or yogurt
1 cup organic sugar
2 tsp vanilla extract
1/4 tsp salt
Mixing bowl (or stand mixer)
Blender (with dry blade canister) – optional
Spoon
Cookie scoop – optional
Parchment Paper
Cookie Sheet
Frosting
1 cup butter
4 Tbs maple syrup
2 tsp vanilla extract
4 Tbs maple syrup
2 tsp vanilla extract

To Make: Spelt or whole wheat pastry flour (flour made from soft white wheat berries) works best for this recipe because it has a softer texture than other whole grain flours.
Step 1: Put the butter in a mixing bowl, put the bowl in a warm oven until the butter is soft.
Step 2: If using a grain mill (or high powered dry blade blender) to make fresh flour, grind 2 cups spelt or soft white wheat berries to make 3 cups flour (alternatively, you could use store bought sprouted spelt flour).
Step 3: Add the flour and cultured milk to the melted butter. Mix together with a spoon. Cover the bowl with a towel or plate and leave in a warm place for 8-24 hours.
Step 4: Add the organic sugar, vanilla and salt to the soaked dough and mix together.
Step 5: Using your spoon (or cookie scoop*) drop dough by spoonfuls on buttered cookie sheet (we line ours with parchment paper because it is not stainless steel).
Step 6: Bake at 350℉ for 15 minutes, or until edges of cookies are golden brown. Let cool completely.
Step 7: Frost cookies**, arrange on plate and enjoy! (Perfect accompaniment to a hot Dandy Blend Latte!)
Tiny Tips (by Malia)
*If you don’t have a cookie scoop but want to make sure your cookies are all the same size, place your dough in a pie plate and cut pie slices for how many cookies you should have.
**If you don’t have a pastry bag for frosting your cookies, put all your frosting into a ziptop sandwich bag and cut a small hole in the corner. Gently squeeze the frosting out of the bag and onto your cookies.
To make frosting: Add 1 cup softened butter, 4 Tbs maple syrup and 2 tsp vanilla extract to your mixing bowl. Beat with a whisk until light and fluffy. (Malia says coconut flakes make perfect sprinkles, too!)
