Healthy, Quick & Easy Homemade Bisquick Mix

Make this quick and easy DIY mix for pancakes, waffles, biscuits, dumplings and more.

I miss Bisquick. The fluffy pancakes, delicious waffles, flaky biscuits and the sweet shortcake served with strawberries and cool whip! It’s one of those foods that trigger happy childhood memories. That giant yellow box was a mainstay in our pantry.

Is Bisquick Bad for Me?

What none of us realized back then was that this quick baking mix was filled with partially hydrogenated oils and bleached flour filled with synthetic vitamins and minerals. And who knew these ingredients would wreak havoc on our health and digestive systems.

I know I’m not the only one with little ones under foot, homeschooling to accomplish and a home to run. We struggle against allowing convenience to overrule our healthy food choices. Which is why I love having healthy convenience foods that are equally as delicious as their junky counterparts.

There are 13 ingredients listed on the side of the Bisquick box, but the following recipe is made from four simple ingredients commonly found in most pantries. I recommend using sprouted flour which is made from grains that are soaked and allowed to sprout before being ground into flour. This reduces the phytates and anti-nutrients naturally present in grain, allowing for easier digestion and nutrient absorption.

If the cost of sprouted flour is cost prohibitive, using organic unbleached white flour will still be a better choice than the big yellow box!

*A dear reader noticed the following recipe called for baking soda, but the photo below showed baking powder…she inquired about this discrepancy and, sure enough, the recipe should have read baking powder. Sorry to any of you who tried this recipe with baking soda (although my dear friend reported making a successful batch of pancakes even with the soda!). Recipe has since been updated.

Ingredients

Instructions

  • Add flour, baking powder and salt into the bowl of a stand mixer (or large bowl if mixing with pastry cutter or by hand).
  • Mix in melted coconut oil using the whisk attachment, a pastry cutter or by hand.
  • If your coconut oil is solid, sift through the baking mix with your hands searching for any large pieces, squeezing them between your fingers until grainy.
  • Store Bisquick mix in an airtight container in the refrigerator.

Notes

  • You can use solid or melted coconut oil for this recipe, just be sure no pieces larger than the size of a pea remain.
  • Use organic sprouted flour to make this baking mix even healthier.
  • Baking mix is shelf stable, however we recommend storing in the refrigerator.
  • Baking mix should last 3-6 months in the refrigerator.

When I made this turned out like dough, not like the dry bisquick mix.

Yikes! That’s no good! Was your coconut oil liquid or solid? You want it to be solid, then you mix it in with your hands, squishing the solid pieces until they’re really little. If it’s like a dough, I suppose you could just add some milk and make biscuits, hopefully you didn’t toss it out!

Thank you! We’ve been craving waffles but I didn’t want to reach for that yellow box. Going to try this, this weekend.
